I made this cucumber salad this week and had it as I made this cucumber salad this week and had it as a side with my lunch. I paired it with grilled chicken and jasmine rice, then mixed everything together and ate it like a bowl-style salad. The apple cider vinegar and onion add so much flavor and help the rice taste less bland without adding a lot of extra calories.

This lunch kept me full all the way until dinner. When you pair veggies with protein, you’re less likely to experience that mid-afternoon crash because the combination of protein and fiber helps keep your blood sugar stable. If you need even more sustained energy, add a complex carbohydrate and a healthy fat.

The more balanced your meals are, the more satisfied you’ll feel. When we skip vegetables, we’re missing out on so many benefits, from better digestion and energy to improved fullness and overall nutrition.

I strive to maintain my fitness during nap time or I strive to maintain my fitness during nap time or at 5 a.m. in my garage gym. Thirteen months postpartum, I earned my spot in the Metcon Rush in-person CrossFit competition as an RX individual this July. I finished 4th out of 21 participants and secured 1st place in one event, completing all but one workout in my garage by myself with Chris and Arielle cheering me on. It’s been a long year of healing but I’m proud of how my body has recovered after an emergency C-section. To all the moms out there: you don’t have to lose your strength after having kids.
